Throw Back Part 2: Baby Girl

October 6th, 2022 at 1:10am, our world changed forever. Charlotte “Charlie” Elizabeth was born and so were two new (and already exhausted) parents.

It is interesting to me that we only ever talk about how a baby was born, not the fact that at the same time a mother and father are born. Our world was rocked in the best way possible.

Anyways, back to Charlie’s story… I kept a journal to her the entire pregnancy, and it is fun to look back on and read so I wanted to share with you all.

Baby Bug- oh how I can’t wait to meet you! I have waiting a long time for you. You have another little baby watching over you in heaven putting his or her little hands on you to help you grow. You were conceived the same month he or she would have made their appearance. It’s no coincidence to your timing and while I am scared and over joyed at the same time, you are already so incredibly loved by both me and your dad! Baby Bug, we can’t wait to meet you in October and watch you grow into the person you are going to be.

Week 3 – I couldn’t wait any longer. Sunday January 23rd the first positive appeared! Well, the home pregnancy test was a little unclear but I swear I could see the very faint pink line. The 24th, the line became more clear and by the 25th, there was no debating it! That home test was as positive as positive can be! Excited and nervous, I gave Tyler a little gift announcing the news and he skipped and jumped around the room like he had won the lottery! Best day ever!

Week 4 – my boobs hurt, my anxiety is high but my excitement is even higher. The fatigue sets in but completely manageable. By the end of the week I’m feeling worn down but overall happy and ready to see my little one in a few weeks. First doctors appointment is booked for around the 8week mark. It’s getting real!

Week 5 – hello nausea and fatigue. My mom figured out I was carrying you when I passed up alcohol but honestly I’m so excited for her to know. Can’t keep this big of a secret from my bestie. Also, conveniently, we will be seeing the entire fam… both sides… this week. I wonder if we will be able to hide it?! ….. I did it! I kept it a secret! But damn it’s getting harder and harder. The nausea and fatigue are kicking my butt!!!

Week 6 – OMG nausea and fatigue! Baby bug I think you are killing me from the inside but I still love you more than anyone in the entire world. You may be the size of a blueberry but to me you’re already my baby! Also, I think all of our family is very suspicious that you may be cooking inside me! Pretty sure I won’t be able to hide you much longer!

Week 7 – off to a rough start! Not totally convinced there aren’t a couple baby bugs in my belly. For being only the size of a raspberry, you are mighty! Your dad, is a saint. My cravings, nausea (vomiting), and fatigue are through the roof and he is taking care of me every step of the way. I am lucky to have him as my partner and you to have him as your daddy! I didn’t even get out of bed for an entire day this week… but don’t worry, your big brother, ash, is making sure I’m snuggled at all times. I’m still in love with you and so happy you’re in there and growing but boy oh boy this is a challenge! And in other big news, a couple days shy of 8 weeks, the meadley crew all know you exist. While visiting with the fam, and Brooks (our nephew) needed his diaper changed Tyler dropped the bomb that he needed practice changing a diaper. To say the family is over the moon is an understatement.

Week 8 – this week started with a stomach bug and has made mommy super nervous.. I am having some cramping but feeling reassured that we have our first prenatal doctors appointment Friday. Let’s be real… Friday can’t come soon enough to get you checked out! Can’t wait to “meet” you little one! …meeting you for the first time was amazing! Your little heart beating 176bpm. Mommy and daddy are in love with you!!

Week 9 – baby bug! I love you but you are kicking my booty! Morning sickness or should I say all day sickness is rough and still in full swing. Thankfully my doctor finally prescribed be something 🙌. This week we visited your uncle Gerald and celebrated your grandma Patti’s birthday. Everyone is excited to meet you! Oh and I have looked at you a couple times at work. You’re moving like crazy and your heart beat is strong! You’ve been ranging 171-179bpm.

Week 10 – well the news is out to many friends and family members! I love seeing your little heart beating while I’m at work. I’m starting to feel a little better but still every day is different. We had our first solo weekend, no dad around. Your brother, Ash Man, took over the role of man of the house and taking care of us.

Week 11 – this week started out with a little scare when I woke up to a lot of blood but baby bug but your heart looked strong and all your little limbs wiggling on the ultrasound certainly relieved our fears. I’ve had to take it easy and rest rest rest… your puppy brother is great company for this part! Puppy brother is even loving the pregnancy pillow. Even if I did only take pictures of the dog and no bump pictures.

Week 12 – Little bug, your heart is beating at 167bpm and you’re using mommy’s insides as a trampoline. Mommy is a little less nauseated and a whole lot more hungry! Family and friends are starting to find out about you and everyone is excited! Everyone thinks you’re a boy but I’m convinced you’re a baby girl. Can’t wait to find out soon!

Week 13 – welcome to the second trimester! And I’m still puking! Love you little one! We find out what sex you are this week! Saturday can’t come soon enough! ….you’re a girl! Baby girl!! I knew it!! The zits on my face and the nonstop nausea gave it away! I’m so excited to meet you Charlotte “Charlie” Elizabeth Meadley.

Week 14 – baby girl, you still have your mama nauseated and now second guessing your name but here we are, still ecstatic to meet you! Now if only you’d let your mama sleep! That would be nice! Mama is tired…and starting to show! But every time I touch my belly all I can do is smile! Love you baby bug!

Week 15 – Charlotte “Charlie” Elizabeth Meadley. You are so loved. This week your lolli and mommy went shopping for nursery furniture and the Easter bunny brought you an Easter basket! We cannot wait to meet you little one! Oh and thanks for laying off on a little bit of the nausea for your mama! I greatly appreciate you!

Week 16 – YOU MOVED! Well mama felt you move for the first time! Little flutters in my belly! I cried, your dad laughed, and your Lolli was over the moon excited! Glad you liked the cinnamon roll I was eating! We also celebrated one of your friends. Baby girl littley is due just a couple months before you. Mommy and Jaclyn cannot wait to have the two of you together for play dates!

Week 17 – mommy only vomited ONE time and has the energy to get out for nearly daily walks!! This is big time! My appetite is increasing and your activity at bedtime is increasing dramatically. Sleeping is becoming more difficult and mommy is looking more and more pregnant.

Week 18 – it’s officially official! You’re a girl and your name is Charlotte “Charlie” Elizabeth Meadley. We caved and gave into telling our family your name this week. We are so super excited! You looked great on the ultrasound and mom is feeling good. All in all a good week! Happy Mothers Day to me!

Mothers Day with the Meadley Mamas

Week 19 – mom has had some ups and downs this week. Unfortunately not feeling nearly as well as I had in the previous week and even vomited a couples times. My hips and back are so sore. You’re moving all about as I try to sleep at night. The big event of the week is you did your first 5k. We walked with your uncle Alex and he kept our pace brisk to say the least!

Week 20 – half way!! You gave me a little scare and showed me what I have to look forward to with contractions. Yikes! 😬 You also met (and your mama met) a bunch more Meadley’s this week and had your first lake weekend of the summer. Mama tried her best to take it easy as last weeks 5k really took it out of her and she struggled with some more nausea and vomiting but even through all that, she is so thankful to have you in her belly!!

Week 21 – holy heat! Mama has gotten some lake time and boy oh boy she’s dying! You’re rolling and kicking in mommy’s tummy and daddy even felt you move once! Can’t wait to meet you sweet girl!

Week 22 – mommy is large and in charge! You tried helping “walk out” your soon to be bestie (baby littley) and are kicking mommy like crazy every time she lays down. Mommy’s nausea and vomiting are slowing down but unfortunately still around and the exhaustion is back again. Thankfully ash man is always available to snuggle! Fingers crossed for a better week 23!

Week 23 – mom finally broke down and bought maternity clothes. She officially looks preggo and has gained 12lbs. Sleep… well that’s not happening but atleast she has an appetite for all the carbs! 😂 you’re moving around a lot at night but play shy every time your dad tries to feel your kicks.

Week 24 – a busy week and a quick trip to the lake. Mommy felt surprisingly good this week! You’re kicking a good bit and mommy loves feeling all your wiggles! Happy Father’s Day to all the pops and an even more so happy Father’s Day to your daddio! I know he’s excited to meet you little one!

Week 25 – happy 31st bday mommy! Baby girl you had your first beach trip and we managed to only get a little burnt! Can’t wait for you to be on a mommy daughter trip with your Lolli and me next year! You’re kicking and moving like crazy and I love it! Can’t wait to meet you in a short 14ish weeks!! Also we finally made the first steps towards giving you a nursery! Ekk it’s getting very real!

Birthday celebration at the beach with your Lolli

Week 26 – another busy and nearly great week! Mom is tired and feeling very large and in charge but this week you took your first flight to Michigan to see where daddy spent his summers as a child. We enjoyed the slightly cooler weather and plenty of good food and time with daddy’s side of the family. On the negative this week, we did get the news that mommy has gestational diabetes. We will have lots of learning to do this week but mom is doing everything she can to take the best care of you that she can! One more week till the final trimester! Getting closer to meeting you little one!!

Week 27 – now that mama has her blood sugar under control, we are doing much better! You’re kicking like crazy and Daddy loves to make you kick even more by rubbing my belly. We can’t wait to meet you little one!

Week 28 – welcome to the 3rd trimester! We are in the final countdown! More go go go for your mom and dad. Finally putting some thought into your nursery and your first round of diapers came in! It’s getting very real!

Week 29 – girl! Mommy feels giant! Funny thing is the weight gain has slowed down with our gestational diabetes diagnosis but the belly is really out there! You are kicking and moving all around and although its a strange feeling, I love it! Otherwise mommy is exhausted but so ready to meet you! PS we started on your nursery this week! Daddy helped a lot and I think it might have gotten him even more excited too!

Week 30 – 10 more weeks to go!! Getting very very real! We are so excited and ready to meet you!!! You are a wiggle worm and Mom’s getting pretty uncomfortable but happy you’re comfortable inside me! Your dad has now figured out how to get you to kick me and finds it to be the most hilarious thing ever. He even goes all (gentle) ninja on you. I love seeing the two of y’all bond.

Week 31 – baby moon week! Mom and dad snuck away for one final weekend as a party of two! We made our way to highlands nc and enjoyed some cooler weather, pretty waterfalls, good food, and some time to just slow down and relax! Yep, afternoon naps all the way! You wiggled like a crazy person the entire mountain drive and kicked me nonstop with the extra carbs I was feeding you. Mom and dad came back rested and happy and even more eager than ever to meet you! See you in about 8-9weeks!

Week 32 – a good week for mom and baby! Although you wouldn’t cooperate for our ultrasound, you’re moving all around and giving me lots of little jabs. Aside from being a little uncomfortable and having a hard time sleeping, mom is feeling decent. We put in a little work on your nursery with Lolli and pops (they are so ready to spoil you!) over the weekend and mom managed to squeeze in a couple extra naps. See you in about 7-8ish weeks little one!

Week 33 – mom is tired. Work is getting harder and just keeping up is becoming exhausting. We did host a little engagement party for your uncle Gerald. Great to have a little social event and force us to clean up our house. Aka prep for your arrival! We can’t wait to meet you in 6-7ish weeks!

Week 34 – holy guacamole! 6more weeks till your big arrival! Home stretch! Your Aunt Haley and Lolli threw you the most beautiful and thoughtful baby shower this week and mama feels almost ready for your arrival!

Week 35 – mama is struggling! Baby girl you have dropped low and mom is having lots of Braxton hicks contractions. Your little brother and mom are enjoying snacks and snuggles together on a very regular basis. Mom and dad also took their last trip to Lexington prior to your arrival for a great weekend on the lake with family. We can’t wait to add you to the meadley party!! Your cousin Brooks is ready to teach you all the ropes of boating and being over the top cute! Final 5 weeks little one!!

Week 36 – nursery is complete and the house looks ready to welcome a baby! Your Lolli and pops came over and put in the final touches! Mom is feeling quite large and struggling with swelling and Braxton hicks contractions. Even had to leave grocery shopping they got too intense this week. Maybe you’re getting close?! Can’t wait to meet you!! Also, your aunt alexie came to town. She made you the sweetest quilt and brought you your first bit of black dog apperal. So cute and mommy’s heart is so happy getting to see an old friend!

Week 37 – mommy is ready to meet you! Well so is daddy but mommy is really ready to have you out of her belly! You’re measuring right on track and being a little wiggle worm. Mom and dad also got out for a little date night and ash man is hanging close! Maybe your grand entrance is getting close!!

Week 38 – hello! Earth to Charlotte! Time to make your debut! Moms trying all the tricks and you give me moments of contractions but no signs of labor yet! Pretty pretty please come into this world soon!! We had one more lake weekend with the Leach crew… played pregnancy games!! 😂 and we celebrated the marriage of your aunt Becky to Brad! Also you belly bumped with maybe your one day boyfriend! Aunt Emily is due with baby boy number 2 this January! Just a few months behind you! Can’t wait for you two to grow up together! Finally, mom worked what she hopes to be her last week prior to your arrival! Hurry up little one! We are ready for you!

39 weeks – and you are still cooking! Baby girl, you seem mighty cozy and I’m not so sure how I feel about it! You even made mom work another full week! Mom is bouncing and walking, eating spicy foods, and trying all the tricks but you seem uber cozy in there and are showing no signs of evacuation! Hurricane Ian is even on the way… maybe a big storm will kick you out?! Atmospheric change!? Hopeful for anything! We can’t wait to meet you!! …nope! No show for another week! As Lolli said, you work on your own time, just like her! Haha partners in crime already!

Week 40 – what?! How are you not already in my arms?! Hello and goodbye due date! Lots of walking and bouncing and still nada! Mom even went to work on your due date! We are scheduled for induction 40wks and 1day! Can’t wait to meet you!!

October 4th – induction day! Mom was anxious all day and paced around doing errands, having one last large Diet Coke, and cleaning up the house. Dad was a saint and tried to keep me calm all day. At 5:30pm we reported to the hospital and by 6pm induction had started. Labor progressed nicely through the night. Contractions and slow dilation. Around noon on the 5th, the doctor broke my water and Pitocin was started. Unfortunately even with consistent and strong contractions I was unable to rest enough to fully dilate and labor stalled for about 7-8hrs at 7cm dilated. I honestly thought I was going to die from pain at this time. Your dad is a saint. I was not a nice person during that time. Around 7ish pm I opted for an epidural. That was magic and you stayed looking great on the monitor with all the contractions. Something mom was very worried about. Between 11&midnight I was fully dilated and pushing started! Your dad was amazing during the delivery and helped every step of the way. He was basically an extra nurse and even cut the cord. We welcomed you to the world on October 6th at 1:10am. You did give us a little respiratory scare at delivery followed by a blood sugar drop a few hours after birth but you quickly recovered with some fast acting nurses. Although labor and delivery was a long process mom and dad are beyond happy to have welcomed you into this world. We love you baby girl!

Pregnancy and Exercise

Working out while pregnant is a strange thing. Some days, I feel great and other days…well I’m waddling and can barely stand up straight. Both my pregnancy with Charlie and now with baby boy I am doing as best I can to stay active.

Active to me, while carrying another human, means something so different than active while not pregnant. Right now it means, doing something intentional that makes me move. Somedays that is a gentle yoga/stretching, other days it means a brisk couple mile walk and some strength training, and some days it means I made it around the block with the dog who stopped and sniffed every blade of grass with the thought of hey – at least I got up.

Generally though, when I sync my work schedule and workout schedule it looks something like this…

Weekday and working – 1.5-2mi walk with baby girl in the stroller before I head into work. I don’t have to be at work till 9:30 so by no means am I waking up super super early to make this happen.

Weekday and not working – 2mi walk with baby girl in the stroller and a quick strength training workout. Usually with light weights or strictly body weight.

Weekend and working – maybe some stretching or a quick/short walk with the dog in the evening since I have to be at work earlier on the weekend.

Weekend and not working – 3ish mile family walk while pushing baby girl in the stroller.

If you’re an expecting mom or a seasoned mom, what did your exercise routine look like?

Throw Back Part 1: Love Story

Now that I am back…I guess its only fair that we play catch up a little. I am going to create this weekly series to slowly get you up to speed on my life. So today lets start in the “Love” category. Basically I want to tell you all about relationship with my amazing husband, Tyler.

Tyler and I met online using the app Hinge in early 2019. We had both recently been through rough breakups and were just hitting the dating scene. Truthfully, I almost cancelled our first date out of, just not wanting to go. Glad I didn’t! We met for the first time at Queens Park Social in Charlotte, NC . This is a game bar…right up both of our alleys. Much to Tyler’s surprise, I was a lot more competitive than he thought I would be and came ready to win…and win I did. Well except for basketball. That’s his thing and something I am terrible at. From that day on, he hasn’t been able to get rid of me! Ha! Sorry, you’re stuck for life now bud!

We dated for a year then in January of 2020, he put a ring on it! He hid behind it being the dogs birthday and made me believe we were celebrating pup man all morning when in reality he had other plans up his sleeve. Ash, his dog…now my dog has always been a big part of our relationship and celebrating him was a no brainer so he had the perfect coverup story for the day. We picked up breakfast, drove around town with the windows down while feeding Ash bacon, and finally went to the park to take him on a walk and open “his” present. Supposedly a new toy to play with in the park. But surprise surprise, when I was helping Ash open his present, there were no dog toys to be found but rather a ring box and Tyler behind me on one knee. I don’t remember what he said or honestly if I even really gave an answer but in my mind, it was the easiest yes ever!

October of 2020 we tired the knot. After a lot of unknowns and changes with all that COVID brought, we had an intimate ceremony and reception in my parents back yard on Lake Norman. It was the perfect day and honestly better than any wedding I had dreamed of and had planned prior to pandemic lock downs. More to come on this some other day!

And that brings us to now! Happily married and navigating learning to be parents and husband and wife. Our relationship grew leading up to having a child and now has grown even more than I could have ever imagined since bringing Charlie home from the hospital. Seeing your husband as a father might be one of the biggest blessings of them all.

Cannot wait to see what the next chapter of our love story will look like!

Maternity Must Haves

Sharing some of my favorite maternity items…

1. Stanley Cup. I know, I know basic as it comes but it does make me drink water. Something I have never ever liked.

2. Good Pillows. Silly right. But sleep is already hard enough to come by so I am not skimping on the pillows. These are soft but still firm enough that you don’t sink all the way to the mattress.

3. Maternity T-shirts. No one likes looking like Winnie the Poo and with the style being cropped tops, aka missing the bottom half, a good maternity T is a requirement.

4. Back to hydration… liquid IV. I love the lemon lime flavor and it really does make me feel better. I have had crazy headaches this pregnancy and the extra boost of electrolytes has been a game changer for me. Also, I know liquid IV does sometimes get a bad wrap for their sugar content but for me, this makes it drinkable and something I can stomach so well worth it!

5. Magnesium lotion at bedtime. I have had terrible restless leg at night and this has made a huge difference. Just a little bit on my feet and legs at bedtime has helped me to feel a little more refreshed in the morning.

6. Oversized jumpsuit romper things! This is similar to the free people giant adult romper but without the price. I have it in a couple colors and the shorts version on the way. I am obsessed!

What are some of your maternity must haves? Anything I am missing that will make this hot hot hot summer even better with a big belly?!

Try Again…

Writing has always been something I have enjoyed yet don’t always find time for. There is always something. A child to feed, work, time with friends and family, a mess to clean up…. You name it, it seems to get in the way. That being said, here we are again…starting over on this silly blog that I think about on a very regular basis but am always saying, yes, tomorrow I will start again….over and over and over again! But today is that tomorrow and here I am so….

Hello Friends! How are you?! Like I said, I have missed writing and keeping you updated on all the things in my life. So for this first post, I’ll keep it simple and re introduce myself for the nearly 1,000th time!

My name is Kathryn. I am a registered nurse living with my family in Huntersville, NC. My husband, Tyler, and I have been married since October of 2020. Charlie, our wonderful and happy daughter was born in October of 2022 and we are expecting a baby boy this November (yes, Irish twins…things are about to get real crazy). Ash, our fur son is 7 years old and the most handsome, gray faced, lovable dog we could ask for. I do as best I can between navigating being a full time nurse, wife, and mother to stay active and eat relatively healthy. These days it consists of walking several times a week and as far as eating goes….well we try our best to follow the 80-20 rule, 80% pretty good and 20% well we tried! Take out happens more than I would like to admit and pregnancy food aversions have made eating healthy a challenge but like I said, we try!

I hope you will join me as I get this thing up and running for the bazillionth time!

My Experience with the COVID-19 Vaccine

So first, let me start by saying I feel extremely grateful to have been in the first round of recipients. Working in the clinic setting I thought I would have been in a second or maybe even in a third wave of recipients but with the possibility that it will become necessary to deploy ambulatory RNs into the hospital in the event of worsening COVID surging I was able to get both vaccinations at early dates. I feel for those healthcare workers who have been on the frontlines from the beginning yet still unable to receive it at this time even though they are the fighting hands, day in and day out, aiding in saving lives of so many who have become infected with this awful illness. My hope is that all healthcare workers and non healthcare workers will have it in the coming weeks to months so we can all start to feel at least a little protected as we attempt to return to normalcy.

Vaccination #1 – Saturday, December 19, 2020. 10:00AM

Initially, I felt fine. My arm a little sore – to be expected, a sharp object was just jabbed into it. I came home from receiving my vaccination and went about life as normal. Tyler and I went for a walk, ate lunch, cleaned house… honestly a pretty normal Saturday.

Then somewhere around 4pm, I was wiped out!! I felt like a train hit me. We had just gotten back from our walk about 30min prior to and it was all I could do to keep my eyes open. By 4:30, I couldn’t fight the urge to fall asleep any more and climbed into bed. I slept harder than I have ever slept for 2 straight hours. By the time I woke up, my arm HURT. I actually only woke up because I rolled over onto that arm and the pain woke me. I stayed awake for a few hours then returned to bed by 9pm and called it a night.

The next morning I was a little groggy and had a dull headache. By the 24hr mark I was okay, minus my arm. The arm pain started to fade by the 48hr mark and was completely gone by Tuesday when I woke up.

Vaccination #2 – Thursday, January 7, 2020, 10:00AM

Just like the first one, initially I felt okay. I had the vaccine, waited my 15min then headed back to work (at home) for the rest of the day. The first few hours were business as usual, then it hit me like a ton of bricks…

Around 2:00 the headache started, just a dull annoying headache but nothing seemed to make it go away. I tried Tylenol, caffeine, and extra water – my usual cure for all headaches. By 4:00, the chills set in. I felt like I was freezing in my 70 degree home with sweats and a blanket on. By 6:00, I was full on miserable. My head was pounding, my body ached, I was shivering like I was in the Arctic in a bikini, and my arm felt like it was rammed by a bull running full speed. I took another dose of Tylenol at about 8:30 and went to bed to try and sleep off the misery.

The next morning, the headache and just general feeling of brain fog were still present as well as the body aches. I was able to go into work and complete my day but boy do I wish I had it off so I could have slept off the rest of the misery. By about noon, the brain fog and headache did begin to lift and by around 4:00/5:00 the body aches were diminishing. Again, this night, I was in bed by around 8:30pm but thankfully, I only needed to take one dose of Tylenol all day.

The following morning, my symptoms were almost completely gone. A dull headache and a sore arm were my only remaining side effects. The headache went away by the end of the day and the sore arm gone by the end of day Monday.

All in all, even though I did experience side effects, I feel so blessed to have had the vaccine and I feel that it was well worth all the discomfort I felt in the days follow receiving it. I know there is still so much unknown about the vaccine and honestly the virus itself but I feel like it is a great step towards us at least attempting to return to normalcy.

If you have had the vaccine already, please share your experience below. And if you have not received it yet and have questions, please reach out. I would love to answer any questions that I can or at least help direct you to a credible site for further information.

xo, Kathryn

Cooking with Tyler – Week 1

So anyone who knows Tyler, knows he loves a recipe for an idea THEN he basically throws it away midway through preparing the meal and runs with the rest of the dish how he sees best fit. Let’s be real, sometimes this makes something that would be good — AMAZING… and other times, well it ends up with whole lot of love, some crazy flavor, and maybe even a run to Taco Bell.

So for our first recipe we made Avocado Toast with Miso Fast Greens from Shalane Flanagan and Elyse Kopecky’s cookbook, Run Fast. Cook Fast. Eat Slow. Sounds like a simple recipe but trust me, Tyler found his ways to mix it up

Ingredients:

  • whole grain bread – Nope, Tyler doesn’t like whole grain so Italian bread fo us
  • avocado
  • greens – Tyler used kale
  • eggs
  • salt
  • pepper
  • olive oil
  • miso butter
  • garlic – Tyler used pre minced from the jar
  • red peper flakes
  • sesame seeds – I forgot to buy (oops!)
  • everything bagel seasoning – added by Tyler
  • balsamic vinegar – added by Tyler

And notice, I did not put the amount for anything…. Tyler eyeballed from the start today.

Step 1. Heat the oil in a large skillet over medium heat then add greens, stirring frequently, until wilted – done to perfection!

Step 2. Add miso butter, garlic, and red pepper flakes and saute – after a look of disgust when opening the miso butter, he completed this step to perfection… minus the measuring part.

Greens Complete….oh what there is more! Batch 1 turned out perfect and there is so much kale left over, now lets skip the miso and add balsamic vinegar, salt and pepper! Check! Oh wait, there is even more! Now lets make them with just olive oil. Thank goodness Tyler liked the extra special flavors… because nope, that was a funky combo of flavors (and yes, he used the same pan from the first perfect batch through his specialty concoctions…Hello Flavor!)

Step 3. Toast the bread, scoop half an avocado on each slice, smashing the avocado with the back of the fork onto the toast – sous chef to the rescue! My only appearance till clean up has been made. Done to perfection if I do say so myself!

Step 4. Place greens on top of layer of avocado – we had two pieces of toast each, and the mystery greens were a thing. Tyler didn’t tell me which piece had which of the specialty greens so the first bite sure was interesting. Hint, it wasn’t the delicious Miso Greens!

Step 5. Make the perfect fried eggs and place on top of greens- I have to give Tyler credit, he made 4 perfectly cooked, runny eggs. Bravo, Chef!

Step 6. Garnish with red pepper flakes and sesame seeds – not a chance! Garnish by Tyler was Everything Bagel Seasoning — this was actually a great choice! The extra salt was the perfect addition.

So all in all, we ended up with something that was pretty similar to the original recipe, only a few twists and turns. Judge Kathryn (me) gave Tyler a score of: 8. Would have been a 9 but he used too many unnecessary dishes (that I had to clean up).

See below for the original recipe and let me know if you decide to give the Pros or Chef Tyler’s version of the recipe a try!

Happy Cooking!

Let’s Try This Again… Hi, My Name is Kathryn

Hi! Wow, how has more than 2 years gone by since I last post!? Yikes! I have to say, I have certainly missed writing. So with this [ridiculously] long delay since my last post, please allow me to reintroduce myself, or should I say, introduce my NEW self! Just kidding, still the same me, just a new last name….

Hi, my name is Kathryn Meadley. I married the LOVE of my life, Tyler, on 10.31.2020. With the marriage I also got the best puppy son in the ENTIRE world, Ash. He is my shadow, snuggle buddy, and is 100% a mama’s boy. Tyler said he lost him to me while we were dating but being married is a whole new ball game. Don’t worry, you will hear more about both my boys frequently if you continue to follow along through this journey.

And yes, my gray fur baby kitties are also still around. We are a happy family of five. The kitty cats are still just as cute and needy as ever. Debra is my sassy, little girl and Dexter, Debra’s son (we think), is still just as scared of life as ever before. He trusts his people and his mom (Debra) ONLY! But hey, even though he is always in his constant state of hiding, Debra takes great care of him and makes sure neither of them EVER miss a meal.

I also still work as a Registered Nurse. I work for an outpatient cardiology clinic… yep, I left the 12 hour shifts and back breaking work of the bedside for the 8-5 Monday – Friday life. It certainly has its perks but sometimes I do miss those mid week days off. Hard to say no to weekly routine and a consistent sleep schedule though. I have been with this clinic for almost a year and it has treated me well. I even get to work from home from time to time… certainly nice during a pandemic.

Exercise …. well that’s been a bit all over the place. I MISS RACES and EXERCISE CLASSES (without masks)! They gave my TRAINing purpose but I am navigating the online fitness world and am slowly finding a love for BeachBody on Demand. Maybe one day I will follow a program from start to finish but for now I am enjoying the ability to change it up most everyday. As for running, I am finally finding my stride. I had an injury shortly before the wedding (just another obstacle to juggle as a COVID bride! Insert full sass eye roll! haha) that kept me off the pavement for about 3months but over the last few weeks I have started to run more consistently and its starting to feel less like torture.

Food…. this has been a HUGE perk of getting married. Tyler is a GREAT cook and LOVES to cook! #winning!!!! Tyler does about 90% of all the cooking in our house and it is AMAZING!! Yes, I still hate cooking so I have become a great dishwasher while he creates fantastic meals. Slowly, I will transition him to cooking healthier meals but for now I am enjoying not picking up a pot or pan or planning a single meal. It sure is nice to actually EAT at least one good, home cooked meal a day. Oh, how I love this man! (PS this no cooking thing has had its trade off… I am now the Laundry Queen!)

I think that about sums up an introduction/where I am at in life now. I cannot wait to connect with each of you in the coming weeks and months!

XO, Kathryn

All or Nothing

How is it possible that we can go from going 500mph, firing on all cylinders, 100% of the time to these periods of nothing?! Its an odd feeling, and currently, thats the state I am in. I am trying to effectively navigate it but honestly, it almost seems like more of a struggle than the 500mph I am used to.  So how am I embracing it….

First, sleep! Yes, I am still working the night shift but that is only 1-2 nights a week right now so I am 100% allowing myself to recover from each shift. This has been an incredible change of pace and honestly is making the night shift a little more bearable.

Elementary School Friends

Number two, friends! All those people I neglected the past 6months, I am making an effort to see and it has been fantastic. I have loved reconnecting and just enjoying the ability to really embrace conversation that during times of chaos doesn’t happen.

Three, my house is finally getting some MUCH NEEDED love! I feel like it has been neglected since I moved in nearly three years ago since I started nursing school almost immediately after purchasing my home. I have been cleaning out and redecorating and it feels so good (even if it is still a work in progress).

Four, I am actually working out again! I have been running (alone and with friends…hey more connection!), lots of long walks with some of my favorite podcasts, and going to core power yoga several times a week.

Five, cooking real meals! This is strange but I have to give all the love to Trader Joes, with this extra time, it is allowing to actually get back in the kitchen without it feeling like such a chore.

And last but not least, six. I am back out there dating!!! Yes, you heard that right. Over

the last few weeks I have gone on some great dates and I am really enjoying putting myself back out there. Just like the free time thing, this is also strange but I am ready to fully embrace it…. and I promise, no more long distance relationships for me!

So to close, the past 6 month have brought a lot of change in my life for both the good and the bad. I have had the highs of graduating nursing school and passing my boards to the lows of losing my grandma and so much in between. But regardless of these highs and lows, it has brought me to this 5 week period of “free time.” Time I am not sure how to use, but I am trying to take advantage of as I know I will probably never have these days again.

Leave a comment below and tell me how you use your free time!

Raw Generation Protein Cleanse

A couple weeks ago I gave my first “juice cleanse” a try. Being as I had never done one before I was a little nervous so I did a lot of research before landing on this particular cleanse. I had no idea there were so many out there! Seriously, it took a while to pick the right one for me and I highly suggest you do your research to pick the right one for you if it is something you’re interested in.

Here is why I picked the Raw Generation Protein Cleanse:

  • PRE-MADE, ready to go, no work on my part! Sounds lazy but I am a woman on the move. I already have to schedule sleep in my planner so I didn’t want to now have to take to the cutting board and blender for hours a day. Plus this made it easy to take multiple juices with me.
  • Throughout the day you are getting to mix things up, there are three true juices and three that are more like protein shakes. Unlike traditional juicing I had multiple flavors throughout my day.
  • This cleanse actually had calories. Each day was about 950 calories. A lot of the other cleanses I looked at only had about 400-500 calories per day. I don’t know about you but that is not nearly enough for me.
  • I didn’t have to give up caffeine. The cleanse allows for black tea or coffee.
  • If you need a crunch, raw veggies are allowed.
  • Options! They had a 3, 5, and 7 day cleanse option. I ended up opting for the 5 day cleanse but bought shakes for 7 so I could taper off.
  • They can be bought through Amazon Prime (let’s be real, the deal was sealed when I found this out)

How it went:

Fantastic! My goal was 5 days but I ended up doing a 4 day cleanse and tapered day 5 and 6. I was never once hungry (except the time I left my last juice of the day at home and ended up working till almost midnight…so my fault!), ended up with a bunch more energy, lost 5.8lbs and several inches around my lower abdomen, and overall just felt much much better. I feel like it gave my gut the kick start it needed after all the junk I had been eating ((and no, I did not spend all 5 days in the bathroom 😉 )). Also, another added perk, it MADE me drink water. I hate water but with this cleanse since I wasn’t eating a bunch of snacks, I filled that snack void with water. Finally, the best part, it actually tasted good! I really really liked 4 of the 6 and the other two were still good, just not my favorites.

Overall Impression: A+!! I will definitely be doing it again in the future and would highly recommend this cleanse to anyone, but especially to someone taking on their first cleanse.
